Aubergine and Ham Rolls

Ingredients:

1 large aubergine

1 pack of Loriente Serrano Ham

Emmental cheese slices

Homemade-style fried tomato sauce

2 tablespoons of grated Parmesan cheese

Steps:

  1. Slice the aubergine lengthways into thin strips.
  2. Fry the strips on both sides in a pan until they begin to turn golden. Remove from the heat and let them cool.
  3. On your work surface, lay out the Serrano ham slices, place an aubergine strip on top, and a little Emmental cheese.
  4. Roll them up and set aside.
  5. In an ovenproof dish, cover the base with the tomato sauce and arrange the ham and aubergine rolls on top. Sprinkle with Parmesan cheese and bake for about 20 minutes at 180°C, or until they begin to turn golden.
  6. Serve.
