Ingredients:
1 large aubergine
1 pack of Loriente Serrano Ham
Emmental cheese slices
Homemade-style fried tomato sauce
2 tablespoons of grated Parmesan cheese
Steps:
- Slice the aubergine lengthways into thin strips.
- Fry the strips on both sides in a pan until they begin to turn golden. Remove from the heat and let them cool.
- On your work surface, lay out the Serrano ham slices, place an aubergine strip on top, and a little Emmental cheese.
- Roll them up and set aside.
- In an ovenproof dish, cover the base with the tomato sauce and arrange the ham and aubergine rolls on top. Sprinkle with Parmesan cheese and bake for about 20 minutes at 180°C, or until they begin to turn golden.
- Serve.
