Loin Rolls Filled with Rice Salad

Ingredients:

1 piece of Loriente Loin

50g of rice

1 carrot

1 tomato

1 egg

1 small tin of sweetcorn

2 tablespoons of mayonnaise

Oregano

Sherry vinegar

Rocket leaves for serving

Steps:

  1. Slice the Loriente loin lengthways into thin slices.
  2. Boil the egg in water for 10 minutes, then remove and allow it to cool.
  3. Cook the rice in boiling water until al dente, drain, and let it cool.
  4. Meanwhile, chop the tomato, carrot, and egg.
  5. In a large bowl, mix the rice with the sweetcorn, tomato, carrot, and egg. Season to taste, sprinkle with oregano and combine everything with the mayonnaise.
  6. Take a slice of Loriente loin, place a spoonful of the rice salad at one end, and carefully roll it up.
  7. Arrange the rolls on a serving dish over a bed of rocket leaves.
  8. Drizzle with a little sherry vinegar before serving.
