Ingredients:
1 piece of Loriente Loin
50g of rice
1 carrot
1 tomato
1 egg
1 small tin of sweetcorn
2 tablespoons of mayonnaise
Oregano
Sherry vinegar
Rocket leaves for serving
Steps:
- Slice the Loriente loin lengthways into thin slices.
- Boil the egg in water for 10 minutes, then remove and allow it to cool.
- Cook the rice in boiling water until al dente, drain, and let it cool.
- Meanwhile, chop the tomato, carrot, and egg.
- In a large bowl, mix the rice with the sweetcorn, tomato, carrot, and egg. Season to taste, sprinkle with oregano and combine everything with the mayonnaise.
- Take a slice of Loriente loin, place a spoonful of the rice salad at one end, and carefully roll it up.
- Arrange the rolls on a serving dish over a bed of rocket leaves.
- Drizzle with a little sherry vinegar before serving.
