Spaghetti Carbonara with Pancetta

Ingredients:

100g of pancetta

200g of spaghetti

4 egg yolks

50g of grated Parmesan cheese

1 tablespoon of olive oil

Salt and pepper to taste

Steps:

  1. Cut the pancetta into small cubes and fry it in a pan with a little olive oil until it starts to turn golden and crispy. Set aside.
  2. Cook the spaghetti according to the package instructions.
  3. In a bowl, whisk the egg yolks with the Parmesan cheese and set aside.
  4. Once the spaghetti is ready, drain it and add it to the pan with the pancetta. Mix well, then stir in the egg yolk and Parmesan mixture. Remove from the heat and mix vigorously until it becomes creamy.
  5. Serve immediately with a little more Parmesan on top.
